Chicken Ramen Noodle Soup



Chicken Ramen Noodle Soup

  • peanut oil - 2 tablespoons
  • medium yellow onion - 1, finely chopped
  • celery - 2 stalks, diced
  • medium sized carrots - 2. diced
  • garlic - 2 cloves, minced
  • low-sodium chicken broth - 5 cups
  • soy sauce - 3 tablespoons
  • mirin sauce - 1 tablespoon
  • lime juice - 2 teaspoons or to taste
  • Sriracha - 2 teaspooons
  • sesame oil - 1 teaspoon
  • white pepper - to taste
  • salt - to taste
  • dried Ramen noodles - 2 packs
  • cilantro - 1/4 cup, chopped
  • Chicken sausages - 2, cooked and sliced
  • medium-boiled eggs - 4
  • green onion - 1/4 cup, thinly sliced


  1. In a heavy bottom saucepan, heat the peanut oil over medium heat. Add the onion, carrots and celery, sauté until tender.
  2. Add garlic and cook for 1 more minute. Then pour the broth into the saucepan and place over medium-high heat.
  3. Bring to a boil and lower heat to simmer for another 10 minutes.
  4. Add the Ramen noodles and sausages, simmer for about 4-5 minutes. Season with salt and white pepper.
  5. Add chopped cilantro and remove from the heat. Serve hot garnish with egg halves and green onion.

    Think you missed a step. You instruct to bring to a boil and then let simmer for 10 minutes but no instructions to add any liquid first. The veggies would burn if done this way.

    I made this recipe tonight and doubled the ingredients, except for the yellow onion (and I was short on cilantro). Printing out the recipe somehow omits a step of adding the broth, the other commentor’s point. So, I just highlighted the ingredients and instructions, pasted in a doc file, and printed from there. The recipe forgets to mention when to add the soy sauce, mirin sauce, lime juice, sriracha sauce, and sesame oil, so I added all these with the introduction of the chicken broth, which produce a very nice flavoring in the broth. The final soup was very delicious, and I would do this one again.

      Follow-up: As the noodles tend to expand when absorbing more liquid at the time or serving seconds, I would probably only use 3 bricks, rather than 4 bricks, of noodles next time when doubling the recipe. The flavor of the broth was very nice.

      You can find them in Asian stores such as 99 Ranch in frozen section 🙂
