Croissant Breakfast Sandwich

This soft but crisp Breakfast Croissant Sandwich topped with runny fried egg and fried mushrooms is a perfect beginning of the day. The dish may look a little decadent, but it cooks in 15 minutes and doesn’t require any special cooking skills. Give it a try; you’ll love this recipe for sure!

My Recipe

Prep Time: 5 mins
Cook Time: 15 mins
Yields: 2

Croissant Breakfast Sandwich

  • croissants - 2
  • Brie cheese - 4 slices
  • turkey breast - 4 thin slices
  • butter - 1 tablespoon
  • shiitake mushrooms - 3/4 cups, sliced
  • salt - to taste
  • vegetable oil - 1/2 tablespoon
  • large eggs -2
  • paprika - 1/4 teaspoon
  • scalion - 1 teaspoon, finely chopped

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Slice each croissant in half. Top each bottom croissant half with cheese and turkey slices.
  3. Place the croissants on a baking sheet. Bake until the cheese is melted, 5-10 minutes. Remove from the oven and set aside
  4. Meanwhile, melt the butter in a small skillet over medium. Add the mushrooms, and cook stirring occasionally until the mushrooms are fully cooked. Season with salt.
  5. In a medium skillet preheat the oil. Cook the eggs according to your liking.
  6. Top the bottom croissant halves with eggs and mushrooms. Sprinkle with the chopped scalion and paprika. Cover with the top croissant halves.
  7. Serve right away.
