Quick Pasta with Anchovy Sauce

  • cherry tomatoes - 1/2 lb.
  • kalamata olives - 1/3 cup
  • anchovy fillets in oil - 4, finely chopped
  • garlic - 1 clove, minced
  • shell-shaped paste (Conchigliette) - 1/2 lb.
  • extra virgin olive oil - to taste
  • fresh oregano - 1/2 spring
  • fresh thyme - 1/2 spring
  • salt - to taste


  1. Cut the tomatoes in halves. Put them into a mixing bowl with the olives, anchovies, and garlic.
  2. Add a splash of good quality olive, season to taste and gently stir.
  3. Cook the pasta in boiling salted water until al dente, then drain and add to the mixing bowl.
  4. Stir pasta and sauce all together and let it sit for a minute or two. Serve sprinkled with the fresh oregano and thyme.
