Antipasto (‘anti’ [before] + ‘pastus’ [meal]) is not just a starter or finger-food offering; it’s a social event gathered around at the table. 

According to the Italian tradition, antipasti (plural for antipasto) must be vibrant, colorful, with a variety of textures and flavor combinations. It is a dream experience for creative souls willing to express their vision of culinary temptations. Opened-up senses and an awakened palate are the outcomes to aim for with your antipasto masterpiece. The good news is that you are not required to boast an exceptional chef talent. The only thing you need is the authentic and high-quality ingredients – the marvelous strokes you will arrange together on a platter canvas.

By this time, you might already have an idea of what your perfect antipasto experience will look like. You want it to be light and flavorsome, not overwhelming yet memorable, simple yet with notes of daintiness. And it should be as Italian as it can be! Here’s the time for your inner critic to turn into an Italian mother: “Have you done enough to bring Italy to the table?”

It’s unbelievable what culinary power these pickled flower buds have! Just mix a 1/2 pound of roasted peeled gypsy or poblano peppers with a 1/2 cups of extra virgin olive oil,1 teaspoon of minced fresh garlic, and a few tablespoons of Mezzetta capers. Let everything marinate for 30 minutes and serve with slightly warm bread.

Marinated Olives

Antipasto due is Olives with Lemon, Chili, and Rosemary. A starring dish for exquisite Castelvetrano olives aims to treat your palate to rich and buttery Sicilian flavors. Fragrant, piquant, refreshing – all the check-boxes for a late-summer delicious encounter are ticked. Just mix 2 cups of drained Mezzetta Castelvetrano Olives with 1/2 cup extra virgin olive oil, 3 tablespoons of diced lemon, 2 tablespoons on thinly sliced red chili pepper, and a sprig of fresh rosemary. Let marinate overnight and serve as a beautiful savory starter before the meal.

If you want something spicier, add a dash of bite-sized Cascabella peppers. For less heat-resistant gourmets, I recommend trying Tamed™ Jalapeños, a hybrid variety that combines all the best features of jalapeño and bell pepper. Taste them, and you’ll learn that tamed doesn’t mean boring.
