Super Smooth Hummus Tips and Tricks

Today is all about making the most delicious, smooth and creamy hummus you can imagine. Why hummus? Because it is healthy, tasty, and nutritious dish that almost everybody likes. Plus, making hummus isn’t hard at all. You might be a little intimidated at first, but, believe me, you can nail it. Just try!

I’ll share with you my little tips and tricks to make your hummus absolutely amazing. No canned beans, and no shortcuts, so be prepared!

The key to a perfectly smooth hummus is using baking soda. First time when you soak the beans, and then later when you cook them. No worries it won’t affect the taste! Baking soda helps the garbanzo beans to cook faster and softens them.
Intentionally overcooking the chickpeas then whipping the mixture is the second important trick that will make your hummus super smooth. Yes, it’s that simple. Now you just need to start cooking!

Also, there are lots of different hummus recipes. I experimented with lots of them and this recipe, is the best in my opinion. It’s accurate and well tested – although you should feel free to express your creativity and add your favourite toppings and ingredients. Have fun!

Super Smooth Hummus Tips and Tricks

Ingredients

  • dried chickpeas - 1 cup
  • baking soda - 2 teaspoons
  • garlic - 4 cloves, minced
  • fresh lemon juice - 1/3 cups, or to taste
  • salt - to taste
  • tahini - 2/3 cup
  • ground cumin - 1/2 teaspoon
  • olive oil - for serving
  • paprika - for serving

Instructions:

  1. Place the chickpeas in a medium bowl, add 1 teaspoon of baking soda and cold water to cover by 2''.
  2. Soak them overnight.
  3. When ready, drain the chickpeas and rinse. Transfer them in a medium-sized cooking pot. Cover with water and add the rest baking soda.
  4. Bring to a boil, skimming surface as needed. Cook until the chickpeas are very soft, 50-60 minutes.
  5. Drain and remove the skin; set aside.
  6. Meanwhile, place tahini, lemon juice and minced garlic in a food processor. Pulse for a few seconds to combine.
  7. Add chickpeas and cumin and process, occasionally scraping down sides, until mixture is very smooth. If the Hummus is too thick, add a few teaspoons of water to achieve desired texture.
  8. Serve hummus in a shallow bowl, with some paprika and olive oil on top. You can also top it with pesto sauce, roasted bell pepper paste or any of your favorite toppings.
