I’m excited to share one of my favorite Friday night dinners: my super-simple Stir-fry Beef Pappardelle. It’s done in about 30 minutes, and it’s that magical blend of Asian flavor and Italian texture that somehow just works.
Yes, I know—Asian-style stir-fry and Italian pasta sound like an odd couple. But once you try this meaty, savory combo with wide, velvety ribbons of pappardelle soaking up that umami-packed sauce, you’ll understand why I keep coming back to it. Bonus: it pairs beautifully with a glass of Pinot Noir or a smooth red blend.
And if you want to make this even faster (and more flavorful), use fresh pasta. It cuts the cooking time down and gives the dish that extra something.
Stir-fry Beef Pappardelle

Vegetable oil – 2–4 tablespoons
Beef sirloin – 2 lbs, cut into 2-inch strips
Asparagus – 2 small bunches, cut into 2-inch pieces
Fresh or dry pappardelle – 8 oz
- For the Sauce:
Low-sodium soy sauce – 4 tablespoons
Mirin sauce – 2 tablespoons
Hoisin sauce – 2 teaspoons
Chili paste – 1 teaspoon (or to taste)
Toasted sesame oil – 2 teaspoons
Garlic – 2 cloves, finely chopped
Ginger – 1 teaspoon, grated
Directions
- Cook and drain pasta al-dente, as directed on package.
- In a small bowl, whisk together all the sauce ingredients. Set aside.
- Heat the vegetable oil in a large wok or deep skillet over medium-high heat. Add the beef strips and stir-fry for 2–3 minutes until browned.
- Add the chopped asparagus and stir-fry for another 2 minutes.
- Pour in the sauce and mix well to coat the beef and veggies.
- Add the cooked pappardelle to the pan and toss everything together so the noodles are fully coated. Cook for 1 more minute.
- Remove from heat and serve immediately—preferably with that glass of wine!
